baked quesadilla

I just made this up off the top of my head. It's a whole wheat wrap topped with black beans sauteed with garlic and jalaepeno pepper, diced tomato, green onion and vegan gourmet montery jack cheese. I put it in the oven on broil for a couple minutes until the cheese bubbles, and then I added the guacomole and folded it over.
Even though it doesn't look fabulous, it was actually really good! The wrap crisped up nice, but I was still able to fold it without breaking it. It had a nice flavour and was just the right size for dinner.

I've suddenly had to go vegan for health reasons, and have been scouring blogs and web pages for ideas. A lot of the ingredients listed in some recipes are out of my reach, living as I in non-vegan-friendly Small Town, Ontario. I saw your location and my heart beat a little faster, and then upon seeing a recipe that included vegan cheese that not only was made to taste like a specific kind of dairy cheese, but that also melted, I had to ask: if not for the name of a store that carries such a thing, then for the brand name itself. I appreciate any help you can give me!
Hey, the brand name is Vegan Gourmet, made by a company called Follow Your Heart. It can be purchased at most Loblaws/Your Independent Grocer stores, as well as many natural food stores. It does freeze ok, so if you had to pick some up while in a bigger urban centre you could buy some extras and then freeze it in serving sized baggies. Good luck!
